So we want your opinion, more minds are better than one. Here is the current layout of the kitchen and dining room:
Sorry there photos took longer to get here. Something about the new browser resulting in no photo button. I found someone else who couldn't find the "Attach Photo" button: http://www.somelifeblog.com/2009/12/blogger-editor-broken-add-photo-icon.html

The previous owners had a tiny fridge in the top left corner of the kitchen as it's shown in the picture. There is a small movable pantry (1.5 feet square and 5.5 feet tall) next to the fridge. There is a cupboard and counter in the small weird corner next to the stairs. There are also counters on the bottom side between the sink and stove and the sink and back door. There are cupboards above the counter to the left of the sink. Just above the sink is a window. There is a vent over the stove.
We have considered taking out the wall between the kitchen and dining room to extend the kitchen. So please consider that.
We'll be putting pictures of the results. Thanks for the help.

I would turn the wall into a half wall/ bar height counter. I would look on hgtv's spice up my kitchen for more help.
I second elizabeth--add a bar there, or even a 1/2 wall. and toss that rolling pantry, or put it downstairs in storage or something.
is that the only thing you want help on? :)
New Idea! expand the kitchen onto the porch and move the back door next to the basement door instead of perpendicular. This will give you a whole wall of cabinets, counter tops and corner space.
What is behind that weird corner next to the fridge? I take it you can't straighten that wall out. For sure toss the tiny pantry and get a regular fridge. As far as counter space putting a bar where the wall is would work. One thing about an open floor plan, you can't shut the door on a messy room. Would you be able to see into the kitchen from the front door if you take that wall out? Have fun.
